Sugar Syrup Directions:

- Place a deep sauce pan over high heat, then add 2 cup of white sugar, 1 cup of water, and 1 tsp lemon juice. Bring water and sugar to a boil over high heat, then reduce the heat over low heat and simmer for 3-5 minutes or until sugar is dissolved. when the syrup is clear that mean it's ready!
- Set the sugar syrup a side till it completely cool down. (In this recipe we need the syrup to be cold)

NOTE:
In a baklava sugar syrup we always want to have sugar more than the water, that's will keep your Baklava crispy, and crunchy for longer time.

Baklava Filling:

- In a food processor add the Unsalted Pistachio Nuts or any other unsalted nuts, give them a few pulses. DO NOT over ground the nuts, because you gonna end up with a paste, and that's not what we want.
-Transfer the grounded Pistachio to a deep bowl, then add 1 Tbsp of cardamom, and 1 Tbsp of sugar. Mix them till will combined.

It's Time To Roll the Baklava!

- Preheated the oven to 350F/175C.
- Grease the baking pan with the melted butter.
- Place all the phyllo sheets on the table and cut them into halve (look at the video)
- Take one phyllo sheet on your working table and cover the rest of the sheets with a damp cloth, these sheets are very thin and they dry out very quickly.

-Brush the top phyllo sheet with the melted butter, fold the sheet . Fold 1.5-inch of the sheet and place a wooden stick (wooden dowel rod 1/4x21 inch) over the folded part, then start to roll it out towards the middle, make sure to not roll the sheets too tight. and set it aside.

-  Brush the second phyllo sheet with the melted butter, then place the previous rolled phyllo sheet over it, and roll out the second sheet over it. (for more detail see the video)

- Push the rolled phyllo sheets together from both ends to the middle gently with your hands, creating folds in the phyllo, then remove it from the stick.

- Repeat the same process until you finish all the phyllo sheets.

- Brush the top of the baklava with more melted butter.

- Bake in a preheated oven at 350F/175C for 25-30 minutes or till golden brown.

- Pour the prepared sugar syrup over the hot rolled baklava, let them rest for at least 1 hour that will allow the rolls to soak up the syrup.

- Sprinkle with a grounded pistachio nuts and serve.
