Red Lentil Soup - Ramadan Recipes

Red Lentil soup is one of my favorite soups specially in cold weather. It is great dish with high protein content. Nice side dish to start your meal and warm your stomach before breakfast.
serving size: 5-6


Ingredients:

2-3 tbsp veg. oil
1/2 cup vermicelli

2-3 tbsp veg. oil
1/2 medium onion, finely chopped
1 cup Red Lentil
2 tsp cumin
salt & black pepper (to taste)

5-6 cups water
1 cube of chicken flavor bouillon cubes
Red Lentil Soup

Directions:

- Add 2-3 tbsp veg. oil to a pan over medium heat, then add 1/2 cup of vermicelli. Stir continuously till it lightly gold, take it off the heat and immediately transfer it to a deep bowl. Set it aside for now. 

- Place a suspan over medium low heat and add 2-3 tbsp veg. oil. 
- Add 1/2 finely chopped onion, stir and sauté for a minute.

- Add 1/2 cup of red lentils, then season it with 2 tsp cumin, salt & black pepper (to taste). Then add 5-6 cups of water, and 1 cube of chicken flavor bouillon cubes (theses cubes brings out a perfect chicken flavor). then stir and bring everything to a boil, Cover the suspan simmer for 30-40 minutes or till the till the soup thick and the lentils soften.

- Add the vermicelli that we fried then earlier, on the soup.

- Bring everything to a boil. Cover the suspan and continue cooking all                                                  ingredients over low medium heat for another 15- 20 minutes or till the vermicelli soften.

- Remove from heat and set aside to cool little bit. (The soup will be thicker when it cool). Serve!
