Oven Roasted Potatoes

This Oven roasted potatoes recipes is best potatoes recipe I ever tried. It is so delicious, and you cannot stop eating it. It is crunchy from outside and soft and yummy from the inside. The rosemary and garlic flavor are great addition, but you can choose your own flavor and modifies the recipe. It is great side dish in Ramadan meal. Please enjoy

Ingredients:

1 kg Potatoes,
(Wash, peel, and cut them up into quarters, sixths, or eighths, depending on size).
3 tsp salt
1/4 tsp baking soda

3 tbsp olive oil
3 tbsp rosemary leaves, finely chopped
2 medium cloves garlic, minced

salt and black pepper
Oven Roasted Potatoes

Directions:

For Boiling the Potatoes:
- Fill a pot with a water and place it over medium-high heat and bring them to a boiling heat.
- Wash, peel, and cut up 1 kg of potatoes into quarters, sixths, or eighths, depending on size. Add 3 tsp of salt, 1/4 tsp of baking soda, and the potatoes and stir. When water reach the boiling point reduce to a simmer and cook until the potatoes are fork tender.


In the Meanwhile,
- Preheat the oven to 450°F/230°C
- In a pan, add 3 tbsp of olive oil over medium heat, garlic, and 3 tbsp finely chopped of rosemary leaves. Cook, and stirring constantly, until garlic just begins to turn golden. Immediately strain oil through a fine-mesh strainer set in a deep bowl. Set garlic/rosemary mixture aside and reserve separately.

- If the potatoes are cooked, drain and place them in a deep large bowl. Season the potatoes with salt and black pepper to taste and toss them with olive oil that we reserve it earlier to coat, stir them potatoes with a spatula or by shaking the bowl until a thick layer of mashed potato–like paste has built up on the potato chunks.

Roasting the Potatoes:
- Place a parchment paper over a baking pan, and just lightly oiled the parchment paper. Transfer the potatoes over the parchment paper and separate them, spreading them out evenly.

- Place the potatoes in the preheat oven and roast them for about 20-30 minutes until they are golden brown and crisp, take the pan out of the oven and shake it and turn the potatoes, then return the pan back to the hot oven and continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking.

- Add the garlic and rosemary mixture over the roasted potatoes, toss to coat and season with more salt and black pepper if need. Serve immediately with your favorite dipping sauce and enjoy the heaven bites.
