5 Minutes No-Bake Samoa Cookies

5 minutes no-bake, no-flour, no-sugar Samoa Cookies - Just 4 Ingredients

these ingredients make 10 cookies


1 cup pitted dates
1 cup unsweetened shredded coconut
1/2 cup milk chocolate chips
1/2 tsp coconut oil
Samoa Cookies


- Toast 1 cup of unsweetened shredded coconut in a pan on the stove top.

- Add toasted coconut to the food processor and give them a few pulses, then add the1 cup of pitted dates and blend the mixture until combined and starts to form a ball of dough.

- Use a 1 tbsp cookie scooper to scoop the dough, then reshape the mixture into a round cookie. Use a stew or any tool that might help to punch a hole in the middle of the dough.

- Place all the cookies in a baking sheet, then put them in the freezer to firm up a bit.

Prepare the chocolate ganache:

Melt the chocolate in double boiler:

- Pour water into the pot, bring the water to a simmer. Then turn off the heat and place a heatproof bowl (stainless steel or tempered glass) directly over the simmered water.
- Place 1/2 cup of milk chocolate chips in the heatproof bowl, then add 1/2 tsp of coconut oil. Stir the chocolate until it's fully melted.

- Get the cookies out of the freezer, then dip the bottom of each cookie in the chocolate ganache to coat it. Place them back over the baking sheet, and drizzle some of the chocolate over the top of the cookies for decoration.

- Place them in the refrigerator for 10 minutes to set. Then serve and ENJOY!
