This is a very famous Texan candy. It is soft, delicious and satisfying. I have tried many recipes but this one is the best, that is why I am sharing it with you. It is also known as Southern Chewy Parline. It is made from simple ingredients, but the result is so good. The chewy Candie is best with the Pecan, but other nuts can be used as walnut and hazelnut.
(These ingredients make 20 Pecan Praline Candy)
Ingredients:
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup corn syrup
1/2 stick unsalted butter
1/2 cup heavy whipped cream
1/2 tsp vanilla
2 cups pecans
Directions:
Toast the Pecan (optional):
- Preheat the oven to 350F/170C
- In a baking pan lay the pecans over some parchment paper.
- Slide the pecans in the oven and leave them for about 5-6 minutes, shake them every 2 mins.
- Take them out and set them aside for now
Making the Pecan Praline:
- In a pot or a suspan add 1/4 cup of white sugar, 1/4 cup brown sugar, and 1/2 cup corn syrup, stir them.
- Place the pot over medium heat on the stove, and keep whisking. Cook the mixture for few minutes till it reach 250F.
- When the mixture reach the 250F, take it off the heat for little bite, and add 1/2 a stick of the butter and stir it till melt completely, then add 1/2 cup of heavy cream while you are stirring.
- Place the pot back to the heat and keep stirring the mixture, till the mixture reach 240F DO NOT OVERCOOK, just get to 240F not more than that, because overcooking it will make the mixture be a little bit harder than normal. This process will probably take at least 15 minutes till it reaches the 240F, the mixture will be bubbly, so just be sure to scrap the sides and the bottom to keep the mixture from burning.
- In the meantime place a parchment paper over a pan, and just lightly buttered the parchment paper.
- When the mixture reach the 240F it will be thickened up, take it off the heat, and add the vanilla, then whisk it till it's well mixed. Pour the toasted pecan over the mixture and mix them till all the pecans are covered with the mixture.
- Now we will scoop these chewy candy Pecan Pralines over the buttered parchment paper (you can use a cookie scooper or a normal spoon), it doesn't need to be perfect, but just make sure to make a small space between each other because they do spread a little bit.
- Leave them at room temperature until they're completely cool.
