Zaatar Manakish

Zaatar Manakish is great breakfast recipe made from a Mediterranean flatbread topped with an olive oil mixed with Zaatar and sesame. The flatbread recipe is so easy and the result is so soft and fluffy. Topped with Zaatar spread which is a mix of Thyme, sesame and Sumac. All baked and served as great meal with tea for breakfast or snack.

Ingredients :

1 Tbsp Instant Yeast
1 Tbsp White Sugar
1 1/4 Cup Warm Milk
2 1/2 Cups Flour
1 1/4 tsp Salt
1/4 Cup Vegetable Oil

For Topping:
1/2 cup olive oil
6-7 tbsp Zaatar

1 Egg (for coat)

Directions :

- In a big mixing bowl add 1 Tbsp Instant Yeast, 1 Tbsp White Sugar, and 1 1/4 cup of Warm Milk, then stir. Cover the bowl with a clean cloth for 2-3 minutes, the yeast will immediately start to dissolve and the mixture will become silky, foamy, and bubbly.

- Then add the 1 1/4 tsp Salt, 1/4 cup Vegetable Oil, and 2 1/2 cups of Flour. Give them a good mix.

- Knead the dough for about 4-5 min. The dough should be sticky and soft.
- Add a few drops of oil to the dough bowl, cover the dough, then leave it in warm place for 1 hour or until it doubles in size.

- In a small mixing bowl mix 1/2 cup olive and oil 6-7 tbsp Zaatar, then set them aside we will use it for the topping.

- Preheat the oven to 450F (230C).

- Sprinkle your table with flour. Divide your dough into 18 equal parts, shape them into 18 balls. Place one of them on a clean surface, and cover the rest with a clean cloth.

- Use a rolling pin, flat every ball into circle that's (about) 3-4 inches. Transfer the dough into a baking sheet. Cover the them with a clean cloth till you roll out all the 18 balls. (watch the video for more details)

- Brush the top of each flat circle with a beaten egg, that help the Zaatar topping to stick in the top. Then scoop about 1 - 1 1/2 tsp of a Zaatar mixture that we prepared it earlier, and spread it over the top of all the 18 roll out doughs.

- Bake them in the preheated oven for 7-10 minutes or until the bottom surface of the Zaatar pastry is golden brown. Let them cool on a wire rack few minutes before serving
