How to make Delicious Meat Pastry - Meat Fatayer

 This is a very easy homemade fatayer recipe made from soft delicious bread stuffed with meat on the top. It you don't eat meat, then cheese, or zaatar could be another choice.

It's made 16-18 pieces

Ingredients For The Dough :

1 Tbsp Instant Yeast
1 Tbsp White Sugar
1 1/4 Cup Warm Milk
2 1/2 Cups Flour
1 1/4 tsp Salt
1/4 Cup Vegetable Oil

Ingredients For The Filling:
300 g grounded beef
1 1/2 medium tomatoes
1 1/2 medium onions
3 tbsp tomato paste
2 tbsp olive oil
2 garlic cloves
salt and black pepper 

1 Egg (for coat)

Directions :

How to make the dough: 

- In a big mixing bowl add 1 Tbsp Instant Yeast, 1 Tbsp White Sugar, and 1 1/4 cup of Warm Milk, then stir. Cover the bowl with a clean cloth for 2-3 minutes, the yeast will immediately start to dissolve and the mixture will become silky, foamy, and bubbly.

- Then add the 1 1/4 tsp Salt, 1/4 cup Vegetable Oil, and 2 1/2 cups of Flour. Give them a good mix.

- Knead the dough for about 4-5 mins. The dough should be sticky and soft.
- Add a few drops of oil to the dough bowl, cover the dough, then leave it in warm place for 1 hour or until it doubles in size.

How to make the filling:

- In a Food processor add 1 1/2 of medium onions, 2 garlic cloves, and 1 1/2 medium tomatoes, give them good pulses. Then pour them in a deep mixing bowl.

- Add 300g of grounded beef, 3 tbsp tomato paste, 2 tbsp olive oil, salt and black pepper over the blended mixture. Mix all together till well combined, then set the filling aside for now.

How to make the Meat Pastry

- Preheat the oven to 450F (230C).

- Sprinkle your table with flour. Divide your dough into 16-18 equal parts, shape them into 16-18 balls. Place one of them on a clean surface, and cover the rest with a clean cloth.

- Use a rolling pin, flat one of balls into a thin oval shape. Scoop about 1 1/2 - 2 tbsp of  the meat filling that we prepared it earlier, and spread it over the top of the rolled out dough, then fold the edges (watch the video for more details). Transfer the dough into a baking sheet. Repeat these steps for all the rest of the balls. (watch the video for more details)

- Brush the folded edges of each Meat Pastry with a beaten egg, then bake them in the preheated oven for 7-10 minutes or until the bottom side of the Meat Pastry is golden brown.

- If the top of your Meat Pastry/Meat Fatayer didn't take a golden brown color, just like mine, you can use the boiler for few minutes. Just make sure to adjust your oven racks to the second closest rack to the boiler in this step.

-  Let them cool on a wire rack few minutes before serving
