Jalebi , also known as Zalabia, zulbia, and Jilapi, these frying sweet popular all over Middle East and South Asia. Jalebi is a fried-dough pastry batter in pretzel or circular shapes, then soaked in sugar syrup.
This amazing sweet, snack, or treat is crispy on the outside, with a sugary chewy texture from the inside. This dish can be served warm or cold. if you never tried Jalebi before, I totally recommend it, I'm sure you will love it.
Ingredients:
First Step Ingredients
1 Tbsp Flour
1 Tbsp Yogurt
1/2 Tbsp Sugar
1/2 Tbsp Yeast
1 1/4 cup Water
Second Step Ingredients
1 cup Flour
1 cup Corn Starch
Orange Food coloring (optional)
Sugar Syrup:
1 cup water
2 cups Sugar
1 tsp lemon juice
Directions :
1- In a mixing bowl add 1 Tbsp of flour, 1 Tbsp yogurt, 1/2 Tbsp sugar, and 1/2 Tbsp yeast, then add 1 1/4 cup of water. Mix all these ingredients together.
2- Cover the bowl and leave it for 1 hour, through that time you can prepare the sugar syrup.
3- Sugar syrup : In a sauce pan add 1 cup water, 2 cup Sugar, and 1 tsp lemon juice. bring water and sugar to a boil over high heat until sugar is dissolved. Then remove from heat and set aside (we need the syrup to be warm NOT cold).
4- After 1 hour, add 1 cup Flour, 1 cup Corn Starch, and Orange Food coloring (optional) to the previous Jalebi / Zalabia mixture. Mix all together and immediately pour this mixture in a Decoration Bag or a Squeeze bottle with 6 mm diameter.
5- Heat up the oil for frying. Fry the Jalebi / Zalabia in a medium - high temperature, that help the Jalebi to puff.
6- Fry the Jalebi in the frying pan till it turns crisp, that take about 2-3 minutes.
7- Remove the Jalebi from the oil and immediately soaked them in a warm sugar syrup that help the Jalebi to absorb the syrup.
8- Keep them in the sugar syrup for about 1-2 minutes.
9- Jalebi is ready to serve.
