4 Ingredient For The Best Empandas Dough - Chicken Empandas recipe

These chicken Empandas are full of flavor and easy to make, you can bake them or fry them in either way they are so delicious, and you can chose the the filling so you can fill these Empadas with any vegan recipe or any kind of cheese, or even make a sea food filling.  
Chicken Empandas

The Dough Ingredients:
2 1/2 Cups Flour
1 Tsp Salt
2 Sticks Cold Unsalted Butter
1/2 Cups Cold Water

Filling Ingredients:
2 chicken Breasts (diced)
3 Tbsp Olive Oil
1/2 Onion (diced)
2 Gloves Garlic ( minced)
Salt+ Black Pepper
3 Cups Spinach (chopped)
10  Mushrooms (diced)
Garnish :
1 Egg

This recipe can make 25-30 Empandas.
Prepare The Dough....
- In a big mixing bowl add the flour, salt, butter, and the water, mix them to gather by your hands or the stand mixer.
- Cover the dough with a plastic wrap, refrigerate for at least 1 hour. 
Prepare The Filling....
Place a pan over medium-high heat, add 3 Tbsp of olive oil, when the oil is hot add the onion, and the garlic, sauté them foe about a minute then add the diced chicken and season with salt, and black pepper. Sauté the chicken for about 3 minutes.
- Add the the diced mushroom and the chopped spinach over the chicken sauté until any water evaporates. Remove from heat and set aside to cool.
Prepare The Empandas...
- On a floured surface roll out dough to 1/8 inch thick, then cut out the dough into circles using a circle cutter.
-   Place filling on one side of the circle and fold the dough over the filling to create a semi-circle. (optional: you can moisten the edges of the circle with water before you fold it)
- place the Empandas baking sheet.
- Brush the top of each empanada with the beaten egg.
- Preheat the oven to 350F, and bake them for 25-30 minutes.
